When it happens that you have surprise guests and a more or less empty fridge, well than it is a real challenge to whip up something. Of course you could do some shopping, but it is so so sooo cold outside so instead I just made the best out of what I had. Actually, I planned to prepare a sauce from the mascarpone to be served with pumpkin gnocchi, it´s season after all. Luckily, I baked a big batch of amaretti a while ago and I always have frozen berries in the freezer so these gave a nice boost to the dessert. In order to bring some color I sprinkled the mousse with some matcha, but chopped pistachio or almonds would be just fine as well.
Ingredients
250 g mascarpone
1 vanilla pod
2 egg yolks
70 g sugar
70 g water
200 ml cream
1. For the mousse bring sugar with water together with the vanilla seeds and the pod to the boil.
When the sugar is molten remove from the heat and let it infuse until the syrup is cold.
2. Over a water bath whisk egg yolks with the syrup until thick and pale.
3. Whisk the beaten egg yolk mixture with the mascarpone and fold in the beaten cream.
4. Prepare the glasses with leftover cookie crumble (I used amaretti) and some poached berries if you like.
5. Pour the mascarpone mousse into glasses and chill for at least 3 hours. Sprinkle with matcha if desired.
Hozzávalók
250 g mascarpone
1 rúd vanília
2 tojássárgája
70 g cukor
70 g víz
200 ml tejszín
1. A mousse-hoz a vizet a curkorral és vaníliárúddal, illetve a kikapart magokkal forráspontig melegítjük. Ha elolvadt a cukor hozzáadjuk levesszük a tűzhelyről és hagyjuk kihűlni.
2. A tojássárgájákhoz adjuk a szirupot és gőz felett, úgy, hogy a tál félig a vízben legyen habosra keverjük.
3. A mascarpone sajtot simára keverjük a felvert tojássárgájával, majd beleforgatjuk a felvert tejszínt.
4. Poharakba valamilyen maradék kekszmorzsát teszünk (én most amarettit használtam, mert túl sokat sütöttem belőle). Erre pedig szirupban megmelegített fagyasztott bogyós gyümölcsöt kanalaztam.
5. Öntsük a mascarpone mousse-t a poharakba és tegyük legalább 3 órára a hűtőbe. Ízlés szerint dobjuk fel matchával.
